I have boneless turkey breast and only a sauce pan and a stock pot.

Put some oil in the stock pot on medium heat & sear turkey

Remove turkey meat, dice into 1 cm chunks, & set aside.

Add chopped onion to oil & saute until translucent.

Whisk in 2 tbsp of flour to make a roux (paste).

Stir in enough liquid (water, stock, wine) for desired serving size.  
Add diced potatoes, carrots, turnip, etc. return meat to pot.  
Bring to a boil, then reduce to a simmer, let cook for an hour.  
Mixed veggies can be aqdded for the last 15 minutes.

Why not slice the breast up and poach it in some chicken
